Ingredients:

  • Raw mangoes 1 kg
  • Vinegar 2 cups
  • Mustard seeds 4 tsp
  • Black caraway seeds 1 tsp
  • Fennel seeds 4 tsp
  • Fenugreek seeds 1 tbsp
  • Cumin seeds 1 tbsp
  • Red chili flakes 1 tbsp
  • Turmeric 1 tbsp
  • Salt 2 tsp
  • Garlic 2 tbsp
  • Jaggery 2 tbsp
  • Green chilies 250 gm
  • Oil ½ cup

 

Method:
First heat vinegar. Then in a grinder add fennel seeds, fenugreek seeds, black caraway seeds cumin seeds and mustard seeds. Grind it and add to the vinegar. Also add in red chili flakes, salt, turmeric and jaggery. Mix well and turn off the heat. Now in a jar raw mangoes and oil. Mix well. Lastly add vinegar mixture and mix well. Serve.

Ingredients:

  • Chicken ½ kg
  • Yogurt ½ cup
  • Ginger garlic 2 tsp
  • Black pepper 1 tsp
  • Dried fenugreek 2 tsp
  • All spice 1tsp
  • Lemon juice 2tbsp
  • Salt 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder ½ tsp
  • Green chilies 2
  • Gram flour ½ cup
  • Oil ½ cup
  • Vegetables (boiled) to serve

 

Method:
Marinate chicken with yogurt, ginger garlic, black pepper, dried fenugreek, all spice, red chili powder, turmeric powder, lemon juice, salt and green chilies for about an hour. Then sprinkle gram flour and mix properly until well combined. Now heat oil and add chicken along with the spices. Cover and cook for about 10 minutes on high heat. Once the chicken is golden brown, place it onto a serving dish and serve with boiled vegetables.

  • Potatoes (round cut) ½ kg
  • Onion 1
  • Tomatoes 2
  • Green chilies 2
  • Salt ½ tsp
  • Turmeric ½ tsp
  • Red chili powder 1 tsp
  • Cumin 1 tsp
  • Mustard seeds 1 tsp
  • Green coriander 2 tbsp
  • Chicken cube 1
  • Oil as required

 

Method:
Heat oil and fry onion then add all spices and roast well now add 1-1/2 cup of water and add chicken cubes when potatoes tender and gravy thick then add green chili and green coriander and stove off.
