Ingredients:
- Undercut cubes ½ kg
- Green chilies 4
- Coriander leaves ½ bunch
- Poppy seeds 1 tsp
- Allspice 1 tsp
- Salt 1 tsp
- Eggs 2
- Wheat flour 1 cup
- Toothpicks as required
Ingredients for gravy:
- Tomatoes ½ kg
- Orange red color ¼ tsp
- Chili powder ½ tsp
- Butter 2 tbsp
Method:
Grind together green chilies, coriander leaves, poppy seeds, salt, add to this allspice and marinate undercut in this for 30 mins, put 3 to 4 cubes of undercut on each toothpick, roll each toothpick in the wheat flour, dip in the beaten egg and deep fry, keep aside.
Method for gravy:
Boil tomatoes in 3 cups water until done, blend tomatoes and strain the pulp, put this tomato mixture in a wok, add in color, chili powder, salt and butter, cook till slightly thick, add in this the fried toothpicks and cook for 10 mins, garnish with coriander leaves and serve hot.
Ingredients for ring:
- Milk 3 ½ cups
- Egg yolks 3
- Gelatin 1 tbsp
- Grated cheese ½ cup
- Chili powder ½ tsp
- Corn flour 1 tbsp
- Mustard powder 1 tsp
- Water ½ cup
- Salt ½ tsp
Ingredients for filling:
- Boneless chicken ½ kg
- Green chilies 2
- Ginger 1 inch
- Onion chopped ½ cup
- Mayonnaise ½ cup
Ingredients for white sauce:
- Butter 2 ounce
- Four 2 ounce
- Milk 1 cup
- Stock 1 cup
Ingredients for garnish:
- Lettuce leaves 2
- Tomato slices 2
- Boiled egg wedges 3
- Boiled peas as required
Method for Ring:
Melt gelatin in half cup water. In a bowl add egg yolks, salt, chili powder, mustard and corn flour, mix well, put milk to cook, when it starts boiling add egg mixture and cook till thick stirring all the time, add cheese and remove from fire, then add melted gelatin, chill, pour this mixture in a well greased mold and leave it to set, boil chicken with 2 green chilies, ginger, onion and salt till tender and 1 cup stock left, remove chicken and chop into pieces, prepare white sauce until thick, cool and mix in mayonnaise, chicken , chopped green chilies, boiled peas and pepper.To serve
In a round platter arrange lettuce leaves, put ring mold, fill the holo with chicken mixture, decorate with tomato, egg wedges and serve.
Ingredients:
- Milk 1 ½ cup
- Corn flour 1 tbsp
- Sugar ½ cup
- Eggs 3 separated
- Coffee 3 tsp
- Gelatin 1½ tsp heaped
- Cream whipped 1 + 1 cup
Method:
Mix corn flour, egg yolks, sugar and milk together, cook on very low flame, stirring with whisk till thick, dissolve coffee in 2 tbsp in hot water, add to the custard, dissolve gelatin, add to the custard, cool custard, fold in cream, whisk egg white stiff, fold in the custard, pour in a jelly mold, leave it to set till firm, remove decorate with piped cream.
