Ingredients:

  • Wheat flour 2 cups
  • Potatoes(boiled & mashed) 3
  • Crumbled cottage cheese ½ cup
  • Onion chopped 3 tbsp
  • Green chilies 4 chopped
  • Crushed red pepper 1 tsp
  • Turmeric 1 tsp
  • Allspice ½ tsp
  • Chaat masala ½ tsp
  • Lemon juice 2 tbsp
  • Coriander leaves 4 tbsp
  • Dried fenugreek 1 tsp
  • Oil ½ cup
  • Salt 1 tsp

 

METHOD:

Mix all the above ingredients together in a bowl, knead with lukewarm water to make a soft dough. Lastly apply oil, keep aside for half an hour. Roll little thick rotties and grill on tawa with little oil or ghee, serve with any raita or green chutney.

Ingredients:

  • Clarified butter ½ cup
  • Onion chopped 1
  • Chicken 750 gm
  • Ginger garlic paste 2 tbsp
  • Green chilies crushed 10
  • Almonds grinded ½ cup
  • Whole dried milk ½ cup
  • Yogurt 1 cup
  • Qorma essence ¼ tsp
  • Salt 1 ½ tsp
  • Cream ½ cup
  • White pepper ½ tsp
  • Blanched almonds to garnish

METHOD:

Heat ghee, add onion, fry till light golden, add chicken, fry till it changes color, add ginger garlic and fry well, add crushed green chilies, cover and cook for 10 mins, add yogurt and fry well, add whole milk, almond power, add 1 cup water, cover and cook till done, lastly add korma essence, cream, salt and white pepper, remove garnished with whole blanched almonds, serve with sheermaal.

Ingredients:

  • Milk 2 litre
  • Boiled rice 1 cup
  • Sugar ¾ to 1 cup
  • Whole dried milk ½ cup
  • Gulkand 1 tbsp heaped
  • Cardamom green powder 1 tsp
  • Rose water 1 tbsp
  • Rose petals fresh or dried for garnishing

METHOD:

Cook milk till 2 cups reduced, do not cook much, add in boiled rice, mix well, stirring well cook on low flame, add sugar with khoya, green cardamom, when it starts getting thick, add gulkand, cook for 10 mins, add crushed rose petals half quantity with rose water, remove and garnish with rose leaves.
