INGREDIENTS:

  • Ripe mangoes, pureed 2
  • Cream 1/2 cup
  • Cream cheese 8 oz
  • Caster sugar 1/2 cup
  • Biscuits, crushed into crumbs 1 packet
  • Mango cubes few
  • Mint to decorate

 

Method:
Beat cream add in caster sugar and cream cheese. Divide biscuit crumbs into the bottom of four serving glasses. Layer mango puree and cream cheese mixture into each glass. Refrigerate until chilled. Decorate with mint and cubed mangoes.

Ingredients:

  • Flour 1 1/2 cups
  • Baking powder 2 tsp
  • Salt 1/2 tsp
  • Cardamom powder 1/2 tsp
  • Mango puree 1 1/2 cups
  • Oil 1/3 cup
  • Caster sugar 2/3 cup
  • Vanilla essence 1 tsp

To Dust:

  • Icing sugar as required

 

Method:
In a bowl, mix the flour, baking powder, salt and cardamom powder. In another bowl, whisk the mango puree, oil, sugar and vanilla until well combined. Add this to the flour mixture and fold until there are no traces of flour left. Don’t over mix. Transfer to a greased pan and bake in the pre-heated oven at 180 degrees C for 40 minutes or until the cake is cooked through and a skewer inserted in the center comes out with a few crumbs. Transfer to a cooling rack, dust with some icing sugar and serve warm or at room temperature with some mango puree drizzled over it if you’d like.
