Ingredients

  • Bitter Gourd ½ kg
  • Onion (Finely chopped) 4
  • Red Chilies (Crushed) 1 tbsp
  • Turmeric 1 tsp
  • Ginger Garlic Paste 1 tbsp
  • Cloves 1 tsp
  • Coriander Powder 2 tbsp
  • Fennel Seeds 1 tsp
  • Salt To taste
  • Tamarind Pulp ½ cup
  • Brown Sugar 1 tbsp
  • Curry Leaves A few
  • Salt To taste
  • Tomato Paste 2 tbsp
  • Vegetable Oil 1 cup
  • Ingredients to Wash Bitter Gourd:
  • Turmeric 1 tsp
  • Tamarind Juice 1 tbsp
  • Salt 1 tsp
  • Brown Sugar 1 tsp
 

Methods

  1. First peel the bitter gourds and make slits in them.
  2. Now without washing them, mix turmeric, tamarind juice, salt, brown sugar and set aside.
  3. Wash after 10 minutes and the bitterness will be removed from the bitter gourds.
  4. Now in a pot, heat the vegetable oil and fry finely chopped onions until they turn pink.
  5. To this add ginger garlic paste, crushed red chilies, turmeric, coriander powder, fennel seeds, salt ad mix everything together.
  6. After this, fill a little of the prepared spice mixture into the bitter gourds and tie them with a string.
  7. Now heat oil in a frying pan and fry the spice-filled bitter gourds.
  8. To the remaining onions, add the tomato paste, tamarind pulp, brown sugar and leave the fried bitter gourds to simmer.
