Ingredients:
- Gelatin 3 tsp dissolved in ¼ cup water
- Instant coffee 1 tbsp heaped
- Eggs 3
- Whipped cream 2 cups
- Chocolate melted ¼ cup
- Caster sugar 3 ounce
- Walnut halves for decoration
- Whipped cream for decoration
METHOD:
Dissolve gelatin in water, mix with dissolved coffee, beat egg yolks and sugar until thick and creamy, mix in the coffee and gelatin mixture, fold in the lightly whipped cream with melted chocolate, beat egg white stiff, fold in the mocha mixture, pour into a mould, chill until firm, dip the mould in hot water for few secs and overturn the dessert into a platter, decorate with piped cream and walnut halves.
Ingredients:
- Mutton ½ kg
- Turmeric ¼ tsp
- Salt 1 tsp
- Mustard oil ¼ cup
- Oil ¼ cup
- Brown onion ½ cup
- Button red chilies 6
- Mustard seeds ½ tsp
- Cloves 3
- Chili powder 1 ½ tsp
- Cumin seeds ½ tsp heaped
- Onion seeds ½ tsp
- Jaggery 2 tbsp
- Ginger garlic 1 tbsp
- Lemon juice 2 tbsp
- Yogurt ½ cup

METHOD:
Boil mutton with turmeric, salt and 2 cups of water till nearly done. Heat mustard oil, reduce to medium heat, add oil, when it becomes hot, add button red chilies, fry until black, remove and discard the chilies, add mustard seeds, cloves, sauté for a min, add the boiled mutton with chili powder, cumin, onion seeds, ginger garlic paste, jaggery, fry well, add the remaining stock and lemon juice, simmer for 5 mins, remove the pan from fire, add beaten curd, mix and put to cook again for 5 mins till oil leaves the masala.
Ingredients:
- Potatoes boiled and mashed ½ kg
- Onion 1 ½ cup grated
- Green chilies finely chopped 6
- Coriander leaves finely chopped 3 tbsp
- Garlic paste ½ tsp heaped
- Turmeric ½ tsp
- Salt 1 tsp
- Lemon juice ¼ cup
- Curry leaves chopped 1 tbsp
- Mustard seeds ¾ tsp
- Oil ¼ cup
Ingredients for Batter:
- Gram flour 1 cup heaped
- Salt ¼ tsp
- Chili powder ¼ tsp
- Baking soda ¼ tsp
- Water to make batter
METHOD:
Heat oil add curry leaves and mustard seeds, add onion, fry for 2-3 mins till soft, add garlic paste, turmeric with ¼ cup water, fry for 2 mins, add boiled and mashed potatoes, mix well, lastly add lemon juice, chopped green chilies and coriander leaves, mix well, shape into balls, dip in prepared batter, deep fry, serve with tamarind chutney.
METHOD FOR BATTER:
Mix all the ingredients and prepare a batter.
