Ingredients:
- Cottage cheese (cubes) 1 cup
- Chickpeas 1 cup
- Green chilies 2
- Dry red chilies 2
- Onions 2
- Ginger garlic paste 1 tbsp
- Tomatoes 3
- Red chili powder 1 tsp
- Turmeric powder 1/2 tsp
- All spice powder 1 tsp
- Oil 2 tbsp
- Salt to taste
For Garnish:
- Coriander leaves 3 tbsp
- Green chilies 3
For Special Chana Masala Powder:
- Coriander seeds 2 tsp
- Cumin seeds 1 tsp
- Black peppercorns 4-5
- Split chickpeas 2 tsp
- Black cardamom 1
- Garlic 2 cloves
- Dry red chilies 2
Method For Special Chana Masala Powder:
- Dry roast all above ingredients and blend to coarse powder
Method:
Soak the chickpeas overnight. Pressure cook the next day with some salt. Fry cottage cheese cubes in little oil till golden. Dip them in bowl of warm water containing pinch of turmeric. Set aside.
Grind the onions and tomatoes together. Heat oil in a pan. Fry the ground onion-tomato paste along with the ginger-garlic paste. Add some red chili powder, turmeric powder and salt.
Add the boiled chickpeas. Fry till the oil leaves sides. Add all spice powder. Add the ground chana masala. Mix well and cook few minutes. Add fried cottage cheese cubes, discarding the water in which they are dipped. Add little water. Simmer for few minutes on low heat. Garnish with green chilies and chopped coriander leaves.
Ingredients:
- Sugar 1 cup
- Water 1 cup
- Milk powder 1 1/2 cup
- Ground almonds 3/4 cup
- Rose water 1 tsp
- Saffron as required
Method:
Make thick syrup by boiling water and sugar. Add rose water and saffron. Add milk powder & ground almonds, mix well. Set in mold till firm, overturn and serve.
