Ingredients:

  • Potatoes (peeled, boiled & chopped) 3
  • Boiled cauliflower chopped 1 cup
  • Corns cooked 1 cup
  • Green peas cooked 1 cup
  • Carrot cooked ⅓ cup

Other ingredients:

  • Oil 1/4 cup
  • Cumin seeds 1 tsp
  • Onion chopped 1 large
  • Ginger-garlic paste 2 tsp
  • Chilies chopped 2
  • Chopped capsicum 2
  • Tomatoes chopped 2
  • Turmeric powder 1 tsp
  • Kashmiri chili powder 1 tsp
  • All spice powder 2 tsp
  • Dried mango powder 1 tsp
  • Salt as required
  • Onion chopped 1
  • Lemon slices 1
  • Coriander leaves for garnish
  • Bread rolls (Pav) as required

Method:
Heat a pan add 2 to 3 tablespoons oil, add 1 teaspoon cumin seeds. Let the cumin seeds crackle and change their color.
Then add ½ cup finely chopped onions. Let onions sauté till the onions translucent. Then add 2 teaspoons ginger-garlic paste. Mix and sauté till the raw aroma of both ginger and garlic goes away. Then add chopped green chilies. Mix well. Now add 2 cups finely chopped tomatoes. Mix very well. Sauté till the tomatoes become soft and mushy and you see oil releasing from the sides, then add ½ cup finely chopped capsicum sauté for 2 to 3 minutes. Add 1 teaspoon turmeric powder and 1 teaspoon kashmiri red chili powder. Then add remaining pav bhaji masala. Mix very well. Add the cooked veggies. Mix very well.
Then season with salt as per taste with a potato masher, begin to mash the veggies directly in the pan slightly. Keep on stirring occasionally and let the bhaji simmer for 8 to 10 minutes, fry the pav so that you serve the pav with hot bhaji. Serve bhaji with the lightly pan fried and buttered pav. Pav bhaji is topped with chopped onions, coriander leaves and lemon

  • Boiled Noodle 1 packet
  • Sesame Oil 2 tbsp
  • Garlic 2 tbsp
  • Chili Flakes 1 tsp
  • Green Chilies Chopped 3
  • Onions slices 1 cup
  • Spring Onions 6 chopped
  • Carrots 1/2 cup
  • Cabbage 1 cup
  • Peas 1/2 cup
  • Green Bell Pepper 1/4
  • Black Pepper Powder 1 tsp
  • Soy Sauce 2 tbsp
  • Vinegar 1/2 tsp
  • Green Chili Sauce 1 tbsp
  • Spring Onions 4 tbsp
  • Salt to taste

Method:
Heat the pan, add Sesame Oil then add Garlic, Chili Flakes, Green Chilies and Onions. Mix well and Cook for 2 minutes. Add vegetables Mix and cook for 2 to 3 minutes more minutes. Now Boiled Noodles and Mix everything well. Then add black Pepper Powder, Soy Sauce, Vinegar and Green Chili Sauce. Mix all ingredients well. Garnish with Spring Onion Greens and Serve
