Ingredients

  • Mutton ½ kg
  • Rice ½ kg
  • Yogurt 1 cup
  • Brown onion ½ cup + ½ cup
  • Ginger garlic paste 2 tbsp
  • Turmeric ½ tsp
  • Salt 1 ½ tsp
  • Chili powder 1 tbsp
  • Button red chilies 6
  • Whole spices mixed 1 tbsp
  • Almonds 10
  • Oil ¾ cup

METHOD

Soak rice for 20 mins. Heat oil in a pan, add ½ cup onion with mutton, ginger garlic paste, fry for 5 mins, add salt, chili powder, turmeric, button red chilies, allspice, yogurt and fry well, add 1 cup water, cover and cook till mutton tender, when mutton tender add in the soaked rice, then add enough water for rice to get tender, when water dries and rice tender, remove in a platter, serve garnished with brown onion and almonds.

Ingredients for Pancakes

  • Flour 1 cup
  • Egg 1
  • Water 1 cup
  • Oil as required
  • Salt a pinch

Ingredients for Sauce

  • Tomato ketchup 4 tbsp
  • Vinegar ¼ cup
  • Soy sauce ¼ cup
  • Tomato puree ½ cup
  • Sugar 1 tbsp
  • Corn flour 3 tsp
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Crushed red pepper ½ tsp

Ingredients for Filling

  • Chicken boiled and shredded 1 ½ cup
  • Onion chopped ½ cup
  • Green chilies chopped 2
  • Flour 1 tbsp
  • Oil 1 tbsp
  • Parsley 1 tbsp
  • Chicken stock 1 cup
  • Salt ½ tsp
  • Pepper ½ tsp
  • Mustard ½ tsp
  • Crushed red pepper ½ tsp
  • Cheddar cheese ½ cup

METHOD FOR FILLING

Heat oil add onion till transparent, add green chilies, flour, seasonings, stock, chicken, cook till it thickens

METHOD FOR PANCAKE

Make batter, leave it for 30 mins. Heat oil in a fry pan, when hot pour batter to make thin pancakes, cook on 1 side, remove, spread the filling in the center, fold in into the roll, make the remaining filling in the same way, pour the prepared sauce on top of the pancakes, sprinkle with grated cheese ½ cup, bake for 10 mins

Ingredients

  • Eggplant ½ kg round ones
  • Onion 1 large sliced brown
  • Tomatoes 2
  • Oil ½ cup
  • Salt 1 tsp
  • Turmeric ½ tsp
  • Chili powder 1 tsp heaped
  • Ginger garlic paste 1 tsp
  • Tamarind pulp ¼ cup
  • Green chilies 6 large ones
  • Achari masala as required
  • Chopped coriander leaves 2 tbsp

Ingredients for Temper

  • Curry leaves a handful
  • White cumin seeds 1 tsp

METHOD

Give cuts on brinjals keep aside in salted water, remove from water, fill the cuts with achari masala. Heat add curry leaves, cumin seeds, ½ cup water, ginger garlic paste, onion brown, fry till soft, add tomatoes, dry seasonings, fry well, add ¼ cup water, cook till oil comes on top, add brinjals, green chilies, leave it on dum, when brinjals tender, remove, serve with chopped coriander leaves.
