Ingredients:
- Milk 1 liter
- Condensed milk 1 cup
- Rice 1/2 cup
- Screw pine essence few drops
- Rabri 250 gm
- Almonds 6-8
METHOD:
Heat milk in pan add condensed milk and rice. Cook on low flame for 30 to 35 minute cook till it becomes thick. Add rabri and screwpine essence mix well. Remove in serving dish and garnish with almonds, serve.
Ingredients:
- Rice 750 gm
- Chicken with bone 1 Kg
- Potato cubes boiled 1 cup
- Clarified butter ½ cup
- Onion sliced ½ cup
- Ginger garlic paste 2 tbsp
- Green chili paste 2 tbsp
- Green coriander paste ¼ cup
- Mint paste ¼ cup
- Spinach boiled paste ½ cup
- Yogurt ½ cup
- Tamarind pulp ¼ cup
- Tomato sliced ½ cup
- Lemon sliced 1-2 lemon
- Cardamoms 4 to 5
- Dried plum 8-10
- Brown onion ½ cup
- Salt as required
- White pepper 1 tsp
- Cumin 1 tbsp
- Crushed coriander 1 tbsp
- All spice powder 1 tbsp
- Clarified butter ½ cup
- Screw pine essence few drops
- Green chilies 4-5
METHOD:
Heat oil add onion fry well. Add ginger garlic paste and green chilies with chicken cook well. Add all spices with boiled potatoes, spinach, yogurt, tamarind and all dried spices. Cook till ghee and spices separate. Add tomato sliced, fried onion, green chilies, lemon sliced, dried plum, green coriander paste and mint paste and boiled rice. Add clarified butter and screw pine essence leave for simmer. After 20 minute remove and serve.
Ingredients for Nihari Masala:
- Salt 1 tbsp
- Red chili powder 1 tbsp
- Turmeric powder ½ tsp
- Paprika powder 1 tsp
- Long pepper 2-3
- Black cardamom 2-3
- Cardamoms 3-4
- Cumin 1 tsp
- Dried ginger 1 tbsp
- Cinnamon 2-3
- Fennel 1 tbsp
- Long 4-5
- Star anise 2-3
- Food color 1 pinch
For Nihari Gravy:
- Chicken (desi) 1 kg
- Oil 1 cup
- Ginger garlic paste 2 tbsp
- Onion sliced ½ cup
- Nihari masala 3-4 tbsp
- Salt as required
- Water as required
- Fine flour ½ cup
- Oil 1 cup
- Water ¼ cup
- Paprika powder 1 tbsp
- Red chili as required
METHOD:
Blend all ingredients of nihari masala in blender. For gravy heat oil add onion fry till golden color comes. Add ginger garlic paste and salt with chicken cook well. dissolved nihari masala with flour in water add in chicken. Also add water leave for 1 hour. Heat oil mix red chili, paprika powder in water add in cook till water is dried out and oil is remaining. Add oil in grave leave for simmer.
