Ingredients:
- Eggplant 500 gm
- Salt 1 tsp
- Cornstarch 2 tbsp
- Oil 2–4 tbsp
- Garlic chopped 4 cloves
- Ginger minced 2 tsp
- Dried red chilies 5–10
- Schezwan Sauce:
- Soy sauce 1/4 cup
- Chili flakes 1 tsp
- Oil 1 tbsp
- Vinegar 1 tbsp
- Brown sugar 2 tbsp
- Five spice powder 1/2 tsp
- Scallions for garnish
- Roasted peanuts for garnish
Method:
Cut eggplant into pieces and fry. Mix all ingredients of sauce. Heat oil; add ginger garlic and chili sauté. Add sauce ingredients cook. Add fried eggplant cook. Add dissolved cornstarch in it. Garnish with scallion and roasted peanut, serve.

- Beef (boiled) 1/2kg
- Rice 1/2kg
- Fried onion 2
- Pea 1 cup
- Potato (cubed) 1 cup
- Beans 1 cup
- Ginger garlic paste 2 tbsp
- Green chili paste 2 tbsp
- Fresh coriander 1 cup
- Green chili 5-6
- Whole all spice 1 tbsp
- Yogurt 1 cup
- Salt to taste
- Oil 1/2cup
METHOD:
In a wok heat oil add fried onion, whole all spice, beef and ginger garlic. Cook well. Then add green chili paste, salt and yogurt. Mix well. Now add Peas, potato and beans. Now Then add rice along with water. Cover and cook well. Serve hot with fresh coriander and green chilies.
