Ingredients:

  • Chicken mince 500 gm
  • Ginger garlic paste 1 tbsp
  • Chopped onion ½ cup
  • Chopped spring onion ½ cup
  • Capsicum finely chopped 4 tbsp
  • Green chili chopped 1 tbsp
  • Coriander chopped 2 tbsp
  • Sambal oleak 2 tbsp
  • Extra hot sriacha 2 tbsp
  • All spice 1 tsp heaped
  • Lemon juice 2 tbsp
  • Salt 1 tsp
  • Clarified butter 2 tbsp
  • Kabab chini powder a pinch

 

METHOD:

Marinate mince with ginger garlic, chopped onion, capsicum, add in all the remaining ingredients, rub well with your palm, divide the mixture into 12 equal portions and make balls, spread this mixture onto skewer using the hand to press each ball, heat clarified butter, grill in grill pan or bake in oven for 20 mins, give dum of coal.

Ingredients for Rice:

  • Sela rice 1 kg 4 hours soaked
  • Salt 2 tbsp
  • Bay leaf 1
  • Oil ¼ cup
  • Mixed whole spices 1 tbsp

 

Ingredients for Chicken:

  • Chicken 1 kg cut into 12 pcs
  • Brown onion 1 cup
  • Ginger garlic paste 2 tbsp
  • Tomatoes 2 large sliced
  • Yogurt 1 cup heaped
  • Oil ¾ cup
  • Chili powder 1 tbsp
  • Salt 1 ½ tsp
  • Roasted & crushed cumin 1 ½ tsp
  • Green cardamom ½ tsp
  • Allspice 1 tsp
  • Mace powder ½ tsp
  • Nutmeg powder ¼ tsp
  • Saffron ¼ tsp
  • Potatoes 4 cut into pcs and deep fried

 

For Garnishing:

  • Mint leaves ½ cup
  • Coriander leaves ½ cup
  • Screw pine water 1 ½ tsp
  • Green chilies 4
  • Brown onion 3 tbsp

METHOD FOR RICE:

Sela rice soaked for 4 hours then boiled with salt, bay leaf, oil and mixed whole spices.

 

METHOD FOR CHICKEN:

Heat oil add brown onion with ginger garlic paste, tomatoes, ¼ cup water, fry for 5 mins, add yogurt, seasonings, chicken, fry well for 10 mins, add 1 cup water, cook till tender then add in allspice powder, green cardamom powder, mace and nutmeg powder.

TO ASSEMBLE THE BIRYANI:

Spread ¼ cup oil on the base of the pan with ¼ cup water, spread some rice then chicken mixture, then remaining rice, sprinkle fried onion and mint, top with screw pine water and saffron mixture, fried onions, cover the pan, put on fire with a tawa pan underneath to reduce the heat for 30 mins.
