Ingredients:
- Mutton ½ kg
- Raw papaya paste 1 tbsp
- Ginger garlic paste 2 tbsp
- Lemon juice 4 tbsp
- Crushed red pepper 2 tbsp
- Paprika 1 tsp
- Salt ½ tsp
- Black salt ½ tsp
- Black pepper 1 tsp
- Allspice 1 tsp
Method:
Marinate botis with all the above ingredients for 1 hour, put in a pressure cooker to cook on very low flame for 30 mins, after 30 mins open pan, the mixture will be dry, add to it 1 chopped onion, 4-5 green chilies chopped, mix well, cook for another 5 mins, add ½ cup oil, fry till oil comes on top. Lastly give dum of coal, serve with nan.serve with mon o salwa parathas
Ingredients:
- Chopped dates 1 cup
- Water 1 cup
- Baking soda ¾ tsp
- Butter 3 ounce
- Sugar 1 cup
- Eggs 2
- Vanilla essence 1 tsp
- Flour 4 ounce
- Loaf pan greased
Ingredients for caramel sauce:
- Butter 2 tbsp
- Brown sugar ½ cup
- Cream ½ cup
- Vanilla 1 tsp
Method:
Finely chop dates, mix it with 1 cup water, cook this on medium flame for 8-10 mins till dates are cooked well, do not overcook, remove, cool, add in baking soda, mix, keep aside. Beat butter and sugar till creamy, add in eggs one at a time, continue to beat till well mixed, fold in flour, add in the above cooked date mixture, mix nicely till well combined on low speed, put in a greased paper lined pan, bake on 180 d for 45 mins, make caramel sauce, pour on top of cake or serve it separately.
Ingredients for kabab :
- Chicken mince ½ kg
- Masako 1packet
- Crushed garlic 1 tbsp
- Onion grinded ½ cup
- Crushed red pepper 1 tsp
- Black pepper 1 tsp
- Salt ½ tsp
- Chicken powder ½ tsp
- Garlic powder 1 tsp
- Green chilies grinded 8
- Bread soaked in milk 2 slices
- Cream ¼ cup
- Cheddar cheese ½ cup
- Mozzarella cheese ½ cup
- Chopped coriander leaves 3 tbsp
- Coal to simmer
Ingredient for handi masala:
- Cream 1 ½ cup
- Milk ½ cup
- Cheese 4 cubes
- Cheddar cheese grated 3 tbsp
- Oil ½ cup
- Green chilies 4
- Ginger garlic paste 1 tbsp
- Crushed red pepper 1 tsp
- Black pepper 1 tsp
- Coriander roasted n crushed 1 ½ tsp
- Roasted n crushed cumin 1 tsp
- Allspice 1 tsp
- Salt 1 tsp
- Cardamom powder grinded ½ tsp
- Mace ground ¼ tsp
- Nutmeg ¼ tsp grinded
- Dried fenugreek 1 tsp
- Capsicum 1
- Onion 1 cut
- Butter 2 ounce
- Chopped coriander leaves 2 tbsp
Method:
Chopperize all the ingredients for kebab together, give dum of coal, grease hands with oil, shape into crocket size kebabs, bake or pan fry.
Method for handi masala:
Heat oil in a wok, add pan fry kebab, stir at high flame, now remove the kebab from the wok, add butter, chopped green chilies, ginger garlic paste, add capsicum, onion, fry for 5 mins, add in cream, milk, cream cheese, cheddar cheese, all the dry spices, add fried kebabs, cover and simmer for 2 mins, serve garnished with coriander on top, serve in handi with nan.
