INGREDIENTS:
- Chicken pieces 1 kg
- Ginger garlic paste 3 tbsp
- Red chili powder 1 tbsp
- Grated jaggary 3 tbsp
- Tamarind paste 2 tbsp
- Red food color as required
- Lemon juice 2 tbsp
- Green chili paste 1 1/2 tbsp
- Corn flour 3 tbsp
- Egg 1
- Tandoori masala powder 2 tbsp
- Charcoal 1-2
- Oil for deep frying
- Mint chutney for serving
- Khattimeethi tamarind chutney for serving
Small baby naan for serving
METHOD:
Take chicken pieces, marinate with ginger garlic paste, red chili powder, grated jaggary, tamarind paste, red food color, lemon juice, green chili paste, corn flour, egg and tandoori masala powder. Mix well and give charcoal smoke twice. Keep it for about 2 hours. Heat oil and deep fry the chicken. Serve with mint chutney and khatti meethi imli ki chutney. This is served with small baby naan.
INGREDIENTS:
- Beef 1 kg
- Whole spices as required
- Curry leaves few
- Onions chopped 2
- Salt to taste
- Tomatoes chopped 3
- Garlic paste 2 tbsp
- Ginger paste 1 tbsp
- Red chili powder 2 tsp
- Turmeric powder 1 tsp
- Coriander powder 2 tsp
- Cumin powder 1/2 tsp
- All spice powder 1 tsp
- Yogurt 6 tbsp
- Lemon juice 1 lemon
- Coriander chopped as required
- Mint leaves chopped as required
- Water 4 cups
- Basmati rice 750 gm washed and soaked
- Green chilies slit 4
- Potatoes 1/2 kg
METHOD:
In a vessel heat oil, add whole spices, curry leaves and chopped onions. Add salt and sauté well till golden. Add chopped tomatoes, garlic paste and ginger paste. Sauté till tomatoes are soft. Add beef, red chili powder, turmeric powder, coriander powder, cumin powder, all spice powder, yogurt, lemon juice and some chopped fresh coriander and mint leaves. Cook well. Add 4 cups of water, bring to boil and cook till beef nearly done. Add 750 gm of washed and soaked basmati rice, green chilies and potatoes. Cover and cook on medium heat till no water remains. Put on dum on very low heat for 10 minutes. Put lots of fresh coriander and mint leaves. Stir well with light hands. Serve with dahikachumbar or lime kachumbar.
TIP:
When making mutton Akni or Pulao, you have to pressure cook the mutton in the gravy till it’s almost done and then add potatoes and rice. You can also add green peas along with the rice.
INGREDIENTS:
- Semolina 1 cup
- Wheat flour 2 cups
- Oil or clarified butter 1/2 cup
- Mix sliced nuts as required
- Cardamom powder 1 tsp (optional)
- Sugar 1 ½ cup
- Piping hot clarified butter 1 cup
METHOD:
In a bowl add semolina, wheat flour. Mix well. Then mix in oil/clarified butter and crumble it well. Knead with water to a medium hard dough. Roll into thick rotis and grill on tawa on both sides on medium low heat until nice, golden and crispy. Let cool and break it into chunks.
Place the ground malida in a thaal and mix sliced nuts and cardamom powder. Mix in sugar and make a well in the center. Pout piping hot clarified butter and mix well. You can give it a shape of a ladoo and serve.
TIP:
It is always better to get motaatta that is roughly ground flour, the chakki people specially grind and give for laddoo making.
