Ingredients for chicken:
- Chicken 750 gram
- Yogurt ½ cup
- Lemon juice 1 tbsp
- Red chili powder 1 tsp
- Turmeric ¼ tsp
- Chaat masala 1 tbsp
- Black pepper powder 1 tsp
- Salt to taste
- Ginger garlic paste 1 tbsp
- Clarified butter ½ cup
- Red food color as required
- Coal as required
Ingredients for gravy:
- Chopped onion 1
- Ginger garlic paste 1 tbsp
- Whole all spice 1 tbsp
- Red chili powder 1 tsp
- Yogurt ½ cup
- Oil ½ cup
- Salt to taste
Ingredients for rice:
- Rice ½ kg
- Butter 4 tbsp
- Curry leaves 1
- Salt 1 tbsp
- Milk ½ cup
- Yellow food color as required
Method:
Marinate chicken with all ingredients except coal and leave overnight. Then bake in oven or grill it and give coal smoke. For gravy heat oil and fry onion then add salt, red chili powder, ginger garlic paste, whole all spice and yogurt and sauté well. Now add chicken pieces and mix. Then add salt and curry leaves in rice and boil them. Pour melted butter and yellow food color mix in milk and put it on dum. Then take out in dish and serve.
Ingredients:
For filling:
- Boiled potatoes 4-5
- Crushed coriander 1 tbsp
- Crushed cumin 1 tsp
- Crushed fennel seeds 1 tsp
- Nigella seeds ½ tsp
- Mango pickle paste 1 tbsp
- Crushed red chili 1 tbsp
- Salt to taste
- Green coriander 2-3 tbsp
- Finely cut green chili 2
For paratha:
- Flour 2 cup
- Wheat flour 2 cup
- Salt 1 tsp
- Carom seeds ½ tsp
- Oil 4-5 tbsp
- Clarified butter for frying
Method:
Mix all ingredients of paratha and knead dough. For filling mash potatoes and mix all ingredients in it. Now make small balls of dough and roll down. Then fill potato filling in it. Now roll another ball and put on first and seal its sides. Roll down paratha and fry on hot griddle.
Ingredients:
- Semolina 1 cup
- Gram flour ½ cup
- Whole dried milk ¾ cup
- Sugar 3 cup
- Clarified butter 1 cup
- Yellow color 1 pinch
- Cardamom 4-5
- Mix dry fruit as required
- Sterling silver leaf 1
- Screwpine essence 3-4 drops
Method:
Add 2 cup water, yellow food color and 2 cardamom in sugar and cook on low flame till sugar dissolves. Sauté semolina and gram flour separately. Then add in sugar syrup mix well and cook on high flame. When boil comes then leave on dum. When semolina gets done then add Whole dried milk mix dry fruit and screwpine essence. Now take out in dish put sterling silver leave and serve.
