Ingredients:

  • Mutton (boiled) ½ kg
  • Ginger garlic 1 tbsp
  • Salt 1 ½ tsp
  • Water 3 cups
  • Whole tomatoes 3
  • achari masala (crushed) 2-3 tbsp
  • Cumin seeds (roasted & crushed) 1tsp
  • Coriander seeds (roasted & crushed) 1 ½ tsp
  • Fennel seeds (roasted & crushed) 1 tsp
  • Poppy seeds ½ tsp
  • Fenugreek seeds ¼ tsp
  • Crushed red pepper 1tsp
  • Turmeric ¼ tsp
  • Chili powder 1 tsp
  • Yogurt 4 tbsp
  • Dried fenugreek leaves 1 tsp
  • Oil ½ cup
  • Coriander as required
  • Mint leaves as required
  • Green chilies (chopped) 4

 

METHOD:

Boil mutton with ginger garlic salt and 3 cups water till tender and ½ cup water left. Heat oil, add tomatoes whole and mutton with stock, cover and cook for 10 mins, remove, peel off skin from tomatoes and fry well with all the coarsely crushed achari masala, poppy seeds, fenugreek seeds and spices, yogurt and boiled mutton, fry well till thick masala left and oil comes on top. Lastly add dried fenugreek leaves and chopped greens, serve with nan.

Ingredients:

  • Seekh kabab (chicken) 1 packet
  • Oil ¼ cup
  • Onion (sliced) 1
  • Capsicum (sliced) 1
  • Green chilies (sliced) 4
  • Salt ¼ tsp
  • Crushed red pepper ¼ tsp
  • All spice ¼ tsp

 

Method:
Heat oil and fry chicken seekh kabab. Remove and cut into three pieces. Set aside. Heat oil and sauté onion. Add sliced capsicum and green chilies. Sauté for another 2 minutes. Then add salt, crushed red pepper and all spice. Mix well. Lastly heat sizzling plate and add the mixture in it. Add fried chicken seekh kabab on top. Serve.

Ingredients:

  • Yogurt ¾ cup
  • Cream cheese 170 gm
  • Eggs 4
  • Black pepper 1 tsp
  • Olive oil ½ cup

Other Ingredients:

  • Flour 1 cup
  • Baking powder 1 tsp
  • Salt ¼ tsp
  • Sugar 2 tbsp
  • Oregano 1 tsp
  • Rosemary 1 tsp
  • Olives green sliced 3 tbsp
  • Mozzarella cheese grated 4 tbsp
  • Zatar 2 tsp

Ingredients for Topping:

  • Cream cheese 200 gm
  • Margarine 100 gm
  • Whipped cream 2 ounce

 

METHOD:

In a bowl beat together yogurt, cream cheese, eggs, black pepper and oil, then add all the ingredients in column 2, fold well, put into cupcake liners in muffin tray, bake for 30 mins, remove, cool, pipe with topping.

METHOD FOR TOPPING:

Beat cream cheese and margarine till fluffy, fold in whipped cream, put in icing bag and pipe.
