Ingredients:
- Mince ½ kg
- Salt 1-1/2 tsp
- Sumac 1-1/2 tbsp
- Crushed white cumin 1-1/2 tsp
- Cayenne powder 1 tbsp
- Crushed garlic 1 tbsp
- Chopped onion 1
- Tomato puree 1 tbsp
- Coal 1
- Clarified butter /butter for frying
- Water 2-3 tbsp
- Pita bread for serving
- Onion rings for serving
Method:
Add all ingredients in mince and chopped it then make kababs, let them rest for a while. Later either grill or fry in butter.
Ingredients:
- Yogurt 1 cup
- Sugar 1 cup
- Orange rind 1
- Flour 1 cup
- Semolina 1 cup
- Coconut shredded 1/2 cup
- Oil 1/2 cup
- Baking powder 1 tsp
- Saffron essence few drops
- Pistachios for garnish
Ingredients for syrup:
- Water 2 cups
- Sugar 3 cups
- Cinnamon 1 stick
- Green cardamom 4 pods
- Lemon juice 1 tbsp
- Saffron essence few drops
Method:
Heat water & add all syrup ingredients and bring a boil then reduce the heat and cook for 10 minutes. Then keep on simmering for more 10 minutes.
In a mixing bowl, put sugar oil and egg, mix it well along with saffron extract. Then add yogurt and orange ring, then semolina, then shredded coconut. Mix it and sieve the all purpose flour with baking powder on it and mix well. Grease baking dish with butter and then dust some semolina. Place mixture in baking dish and bake on 190 c in pre heated oven for 17 to 20 minutes until the top is brown. Cut in pieces and pour warm syrup on it. Keep 1 hour on room temp, garnish & serve it.
