Ingredients:

  • Clarified butter 1/2 cup
  • Onion sliced and fried 2
  • Ginger garlic paste 1 tbsp
  • Green chilies 3-4
  • Chicken 1/2 kg
  • Black pepper whole 1 tsp
  • Cloves 4-5
  • Cinnamon 2
  • Black cardamoms 2
  • Cumin 1 tbsp
  • Bay leaf 1
  • White pepper 1 tbsp
  • Salt to taste
  • Star anise 2-3
  • Rice soaked 2 cups
  • Yogurt 1/2 cup
  • Milk 1 cup
  • Nutmeg mace powder 1tsp

Method:
Heat clarified butter add onion, all spice and chicken cook well. Add ginger garlic and yogurt cook. Add green chilies, white pepper cook. For rice add water and milk and rice cook till its done. Add nutmeg mace powder, serve.

Ingredients:

  • Mango Puree 1 cup
  • Mango juice 1/2 cup
  • Gelatin powder dissolved 1 tbsp

For Panna Cotta:

  • Milk 1/2 cup
  • Sugar powder 1/2 cup
  • Gelatin powder 2 tbsp
  • Warm water 6 tbsp
  • Salt 1/4 tsp
  • Cream 1 cup
  • Vanilla essence 1/4 tsp
  • Diced mango 1/2 cup
  • Mint to serve

Method:
Mix mango puree, mango juice and gelatin powder then layer in glass and leave for set. Add milk, sugar, gelatin powder, vanilla essence, salt and cream mix well. Layer in glass. Let it cool. Garnish with mango chunks and mint serve.
